In this post we teach You how too cook Quince-apricot stew with spiced Basmati rice. Very delicious, so healthy and balanced. Quince is pretty constipating, so we have added apricot to this stew. Quince is cold and dry, it binds stool; apricot is hot and moist, and is laxative. However, if you are suffering from chronic constipation do not use this stew in excess.
1 Qunice
1Onion
About 20 DRy Apricots
Lamb Stew Meat
$ Tbsb of Tomato Paste
Olive Oil
3 Carrots
1 Zuccini
3 Dried Lime
1 Handful of Raw Parsley
1 Handful Of Raw Basil
Basmati Rice
Spices: Cinnamon, turmeric,
Onion Powder, Garlic Powder,
Coriander, Saffron and Nutmeg
At first chop the onion in small pieces. Pour some olive oil in a pot and add cinnamon, turmeric, onion powder, coriander, salt, small amounts of saffron and nutmeg to it. *Cinnamon should be more than other spices.
Fry the spices in the oil for 1-2 minutes, then add the chopped onion to the the oil. Fry it until it is caramelized. Now add the lamb stew meat to the caramelized onion, add the same spices to it and fry it for five minutes.
Meanwhile chop the quince and dry apricots into small pieces and add them to the pot. Again add the same spices to them and let them fry for 3-4 minutes.
Now add some water plus 2 full tablespoon of tomato paste to the pot and let it boil. Add small amounts of saffron and nutmeg to the boiling water.
Now lower the heat, put the lid on in a way that it only partially covers the pot and let the stew cook slowly.
In a separate pot cook Spiced Basmati Rice (You can find the Spiced Rice in Ayurvedic Prsian Cooking Section in our website).
Now let’s make the vegetable stew in a separate pot. Chop the carrots and zucchini in small pieces. Pour some olive oil in a pot and add garlic powder, onion powder, turmeric, coriander, salt to it.
Fry the spices in the oil for 1-2 minutes, then add the carrots to the oil and fry them for 3-4 minutes. Now add the chopped zucchini with the same spices to the pot and let it fry for 3-4 minutes. Mix 2 full in 1 cup hot water and add it to the pot.
Wash the dried limes and make small holes in their skin with a knife and put them in a glass of hot water for 5 minutes. In this way the bitterness of their skin will go away.
Now take them out and put them in the vegetable pot. Add some more water, put the lid on partially and let the vegetable stew cook slowly.
When the food is ready, pour the quince-apricot stew on the rice, add some vegetable stew to it. Have it with a handful of fresh parsley and basil.
Once again, BE CAREFUL! if you are suffering from chronic constipation do not use this stew in excess.
