1 medium size onion
1 glass of mung sprouts
2 bell peppers (different colors)
2 Tbsp tomato paste
5-6 dried apricots
2 Tbsp white sesame
1 glass of rice
Olive oil as desired
Spices: saffron, turmeric, coriander seeds, garlic powder, onion powder, and salt
Chop the onions into very small pieces. Pour some olive oil in the pan and add saffron, turmeric and coriander seeds.Let the oil and spices heat together, then add the onion and wait some time to let them caramelize.
Now add the washed mung sprouts to the pan and add turmeric, coriander seeds, garlic and onion powder. After you fried the ingredients a bit, add the chopped bell peppers and add the spices again. (turmeric, coriander seeds, garlic and onion powder, and salt)
Notice that these ingredients need to have a nice salty flavor, because they’re going to be mixed with rice.
Put the lid on and let everything cook together. Fill half a glass with boiled water, then add some saffron and let it brew. Next, add 2 tbsp tomato paste to the glass and mix it well, then add the mixture to the pan. Wash the dried apricots well, chop then add them to the pan. Add 2 tbsp white sesame to the pan. Don’t put the lid on, let the water evaporate to avoid sticky rice when simmering it in the next steps.
In case you’re not a vegetarian, you can add ground chicken, lamb or camel meat. In the beginning, when the onions are caramelized, add the ground meat before adding other ingredients. Then add turmeric, coriander seeds, garlic and onion powder and salt to the pan and stir them with the caramelized onion.
Boil the rice you’ve soaked before, then drain it in a colander. (You can find spiced rice recipe in the cooking section in our website) Pour some olive oil in a pot, put a layer of rice then a layer of above mixture. Then, stir the rice and the mixture well and let it cook for about 20-30 minutes on medium heat.
