Ingredients:

 1 handful fresh basil

 2 handfuls fresh parsley

 Goat or sheep cheese

 Gluten-free bread or 1 slice whole-grain toast

 1 cucumber

 1 tomato

 Walnuts, as desired

 1 tablespoon pumpkin seeds

 Fresh lemon juice

 Spices: onion powder, garlic powder, and salt

Instructions:

Finely chop the basil and parsley.

Tear the bread into small pieces, sprinkle a little warm water over it, and let it soften.

Finely dice the cucumber and tomato… don’t peel the cucumber, as the peel balances its nature according to traditional medicine.

The amount of cucumber and tomato should be much less than the other ingredients… they’re only meant to add flavor.

Once the bread is slightly softened, mash it with a pestle or fork until it becomes smooth.

Place it in a large bowl and add the chopped herbs, cucumber, and tomato.

Add the pumpkin seeds and cheese.

Season the mixture with lemon juice, onion powder, garlic powder, and a pinch of salt, but if your cheese is salty, be careful not to over-salt the mix!

Mix everything well with your hands until the ingredients are fully blended.

If your body tends to be cold or your metabolism is slow, you can add black cumin seeds (nigella) or cumin powder to balance it.

Once the mixture is ready, shape it into small bite-sized balls.

Place a small piece of walnut in the center of each.

Serve these Doimaj balls as an afternoon snack along with a cup of digestive herbal tea.
