Ingredients:
1½ cups rice flour
½ cup corn flour
2½ teaspoons active dry yeast
2 tablespoons sugar
1¼ cups warm water
4 egg whites
1 whole egg
1½ teaspoons apple cider vinegar
2 tablespoons olive or coconut oil
¾ teaspoon salt
1½ teaspoons guar gum
1½ teaspoons xanthan gum
Spice Mix 1: garlic powder, thyme, turmeric (or cinnamon), coriander powder, fresh or dried herbs
Spice Mix 2: saffron, cinnamon, cardamom, vanilla, rose petals
(The above measurements are for one loaf. Photos may show larger quantities because the recipe was tripled for more bread.)
Gluten is a protein found in certain grains (like wheat, barley, oats, couscous, etc.). It is very sticky, which gives traditional bread its texture, but can create excess mucus in the digestive tract. Some people are sensitive to gluten, or it may worsen certain autoimmune conditions such as celiac disease, MS, lupus, or rheumatoid arthritis. Generally, gluten or gluten-containing grains are not ideal for people with excess Kapha or phlegm.
Gluten-free bread produces less mucus, is easier to digest, and less likely to cause weight gain. Many commercial gluten-free breads use large amounts of starch or flour that may cause constipation. This recipe is designed to be light and easy to digest for most people.
Instructions:
1. In a bowl, pour 1¼ cups of warm water (not too hot or too lukewarm). Dissolve 2 tablespoons of sugar in it (sugar helps the yeast activate). Add 2½ teaspoons of yeast and let it sit for 10 minutes until foamy (about 1 cm of froth will form).
2. In another bowl, mix the dry ingredients: rice flour, corn flour, salt, spices, guar gum, and xanthan gum. Guar gum and xanthan gum help gluten-free dough stick together.
3. In a large bowl, whisk 4 egg whites and 1 whole egg for 1–2 minutes until a thin foamy layer forms.
4. Add the activated yeast, olive oil, and apple cider vinegar to the eggs and whisk for another 1–2 minutes.
5. Gradually add the dry ingredients to the wet mixture. Mix thoroughly using an electric mixer — this dough is sticky and unlike regular bread dough, so do not knead it by hand. Ensure all flour lumps are incorporated.
6. Prepare a baking tray: grease it lightly and dust with rice flour. Spread the dough evenly on the tray. Keep a small bowl of water nearby to wet the back of a spoon occasionally and smooth the dough. Optionally, sprinkle sesame seeds or black cumin seeds on top.
7. Preheat your oven to medium heat (temperatures vary by oven). Bake until the top of the bread turns golden.
8. Enjoy your bread! If freezing, let it thaw before use… it tastes even better the next day.
