Apple & Carrot Jam For Breakfast or Snacks

Ingredients:

For Apple Jam:

 2 large apples

 10–20 pistachios

 2 tablespoons of pumpkin seeds, watermelon seeds, or sunflower seeds

 Spices: vanilla, rose petals, cardamom, saffron, and a pinch of salt

For Carrot Jam:

 2 medium carrots

 2 tablespoons of pumpkin seeds, watermelon seeds, or sunflower seeds

 Spices: vanilla, rose petals, cardamom, saffron, and a pinch of salt

 2 tablespoons honey

Instructions:

Apple Jam:

1. Finely chop the apples and place them in a pot.

2. Add the spices (vanilla, rose petals, cardamom, saffron, and a pinch of salt). Pour a very small amount of water over the apples—just enough so that the tops remain exposed—and cover the pot to steam the apples. (Quince can be used as an alternative if you don’t have chronic constipation issues.)

3. While the apples are steaming, roughly chop or sliver the pistachios.

4. Steam the apples for about 10 minutes. Once cooked, remove the lid so the remaining water absorbs into the apples. Turn off the heat and let the mixture cool.

5. When cooled, add the chopped pistachios and 2 tablespoons of honey. Mix well and transfer to a glass jar. Your apple jam is ready!

Carrot Jam:

1. Finely grate the carrots. Do not cook them.

2. Add the spices (vanilla, cardamom, rose petals, saffron, and a pinch of salt) to the grated carrots.

3. Chop the seeds and add them to the carrots.

4. Add 2 tablespoons of honey and mix well. The carrots will release a little water. Transfer the mixture to a clean jar and store in the refrigerator. Your carrot jam is ready!

Serving Suggestion:

For breakfast or a snack, take a slice of whole-grain or gluten-free bread, spread apple jam on half and carrot jam on the other half. Enjoy with a cup of herbal tea or digestive tea.

Notes:

 Regular jams are very mucous-forming and hard to digest due to their sugar content. Spreading them on bread (which itself tends to produce mucus) is like eating a heavy, mucous-rich combination.

 In this recipe, baked apple is cold and dry, while carrot is warm and dry; together they balance in temperature. Their dryness absorbs excess mucus.

 Honey is the only sweetener added…it is warm, dry, helps reduce mucus, and aids digestion. The combination of apple, carrot, spices, and honey helps absorb excess mucus from the bread and supports digestion.
