How to Cook Mung Beans in Ayurveda

• Mung beans are more balanced than most other legumes. Although they are naturally cold and dry, if cooked properly, they do not cause gas or Vata imbalance; they also help balance Rakta and Kapha؟!

• Soak the mung beans overnight, change the water several times, and cook them with suitable oils such as ghee, olive oil, or coconut oil, along with warming spices like fennel, turmeric, cardamom, cinnamon, green cumin, fresh ginger, thyme, rosemary, black seed, and saffron.

• Using mung bean sprouts is even better because they are easier to digest. However, sprouts should be consumed cooked and spiced; eating them raw may lead to Vata (air) imbalance.

•Like other legumes, mung beans are easier to digest when prepared as a soup or stew?!… because the liquid reduces their dryness and supports digestion.
