Energy Balls — A Healthy Snack

Pour the following ingredients into a blender and mix them well together:

 1 cup pumpkin seeds or sunflower seeds

 1 tablespoon sesame seeds

 10 soaked and peeled almonds

 10 pistachios

 1 cup shredded coconut

 ½ teaspoon cinnamon

 A pinch or two of nutmeg

 ½ teaspoon salt

 12 pitted Piarom dates

 ⅔ cup grated carrot

 2 teaspoons tahini

 3 tablespoons honey

(You can replace the cinnamon and nutmeg spice combo with saffron, cardamom, and rose powder — or even just vanilla.)

If the mixture turns out too stiff, add a bit more honey. If it’s too soft, add more shredded coconut.

Place the mixture in the fridge for about 20 minutes to firm up slightly. Then put a bowl of shredded coconut beside you, roll small portions of the mixture into balls with your hands, and coat them in coconut powder. your energy balls are ready!

These little treats are gluten-free, sugar-free, and dairy-free… Enjoy them as a healthy snack with a warm herbal tea.
